Asian Pineapple Slaw
- 3 cups shredded red cabbage, packed
- 1 carrot, peeled and grated
- 1 cup diced fresh pineapple
- 2 scallions, sliced
- 3 tablespoons apple cider vinegar
- 1 ½ tablespoons reduced sodium soy sauce
- 2 teaspoons agave syrup
- 2 teaspoons sesame oil
- Zest from ½ lime
- Salt and pepper to taste
- Add all the ingredients to a medium mixing bowl. Stir well to combine. Season with salt and pepper to taste.
